Tomato Soup
Description
A rich and creamy tomato soup for the cold winter months. Pair
with garlic bread or a toastie.
This recipe can be makes approximately 10 servings. Prep time:
10 minutes. Cooking time: 30 minutes.
Ingredients
- 2 Onions (diced)
- 10 cloves of Garlic (minced)
- Butter (2 tbsp)
- Neutral oil (2 tbsp)
- Tinned Tomato (400gx4)
- Vegetable stock (700ml)
- Sugar (2 tbsp)
- Black Pepper (1/2 tbsp)
- Salt (2 tsp)
- Chilli powder (1-2 tsp)
- Basil (chopped)
- Other herbs and spices (to taste)
- Heavy Cream (300g)
Steps

Add 2tbsp of neutral oil and 2tbsp of butter to a pan at
low-medium heat.

Once the butter has melted, add the diced onions and fry for
3-5 minutes.
- Add the garlic and fry for a further 3 minutes.

Put to heat to low, and add your tinned tomatoes and
vegetable stock.

Add your salt, black pepper, chilli powder and any other
herbs and spices.

Cover with a lid, and simmer at a low heat for 25-30
minutes.

Once the soup has cooled down, blend with an immersion
blender until you have achieved your desired consistency.

Add your chopped basil and heavy cream, then season to
taste.
