Tomato Soup

Description

A rich and creamy tomato soup for the cold winter months. Pair with garlic bread or a toastie.

This recipe can be makes approximately 10 servings. Prep time: 10 minutes. Cooking time: 30 minutes.

  1. Add 2tbsp of neutral oil and 2tbsp of butter to a pan at low-medium heat.
  2. Once the butter has melted, add the diced onions and fry for 3-5 minutes.
  3. Add the garlic and fry for a further 3 minutes.
  4. Put to heat to low, and add your tinned tomatoes and vegetable stock.
  5. Add your salt, black pepper, chilli powder and any other herbs and spices.
  6. Cover with a lid, and simmer at a low heat for 25-30 minutes.
  7. Once the soup has cooled down, blend with an immersion blender until you have achieved your desired consistency.
  8. Add your chopped basil and heavy cream, then season to taste.
